Prosciutto & Arugula Pizza

Need a quick pizza recipe? Try this sourdough pizza recipe topped with tomato sauce, prosciutto, and arugula. Don't feel guilty, it's healthy!

Time: 15 min
Yield: 2 servings

Ingredients

Sourdough pizza crust
8 oz. of strained tomatoes
2 cloves of garlic, minced
1 tablespoon of salt
Prosciutto ham
Arugula
Parmesan cheese
Extra virgin olive oil

Instructions

  1. Preheat your oven to 450°F
  2. Blend the minced garlic, strained tomatoes and salt in a small bowl.
  3. Spread the tomato sauce on to the pizza crust.
  4. Tear the prosciutto ham into pieces and spread on top.
  5. Once the oven is ready, bake for 8 minutes.
  6. Drizzle extra virgin olive oil.
  7. Put lots of arugula on top (be generous).
  8. Shave the cheese and sprinkle on top.
  9. Slice the pizza and enjoy!

 

Smoked Salmon & Avocado Tartine

This open-faced sandwich puts a lighter, healthier twist on the classic Eggs Benedict by combining avocado and smoked salmon on wholesome sourdough bread. The traditional hollandaise sauce is replaced by a squeeze of lemon and piquant chili flakes to bring everything into balance.

Time: 15 min
Yield: 2 servings

Ingredients

2 slices of sourdough bread
Smoked salmon
1 avocado, sliced
1/4 orange bell peppers, chopped
2 wedges of lemon
Extra virgin olive oil
Pinch of fresh thyme
Pinch of dried chili flakes
Pinch of salt
Pinch of black pepper

Ingredients for Poached Eggs

2 eggs
1 liter of water
3 tablespoons of white vinegar
1 tablespoon of sea salt

Instructions

  1. Marinate the smoked salmon in olive oil for 5~10 minutes.
  2. Combine water, vinegar and salt in a pot and bring to a soft boil. 
  3. Into the boiling water, crack in eggs one at a time and gently stir the water in one direction for 2~3 minutes, then remove the eggs using a strainer. Carefully set aside.
  4. Slice the avocado.
  5. Toast the bread slices and top them with the sliced avocado.
  6. Place the smoked salmon on top.
  7. Gently top with the poached eggs.
  8. Garnish with a pinch of thyme, chili flakes and chopped bell peppers.
  9. Squeeze lemon juice and sprinkle with salt and pepper to finish.
